Why is Gelato Better than Ice Cream

Many people ask, "What is the difference between ice cream and Gelato?"
Though the two are very similar they are also very different. There are four basic differences we will go over below. Because of these differences most gelatos seem more flavorful and richer to the palate.

Fat Content: Ice cream legally has to have at least 10% fat, some have more but there can be no less. Gelato on the other hand contains more whole milk and usually has between 5% and 7% fat. Ice cream usually contains egg yolks thus part of the higher fat content. Gelato often has no egg yolks added at all.

Churning: Gelato is churned at a much slower speed than ice cream. The slower churning allows less air to be mixed in with the gelato thus creating a denser dessert treat. Gelato contains about 25% air while ice cream can contain up to 50% or more air. 

Temperature: Ice cream is served at approximately -10° F and gelato is served at around 5° F. The warmer temperature of gelato allows it to have a richer taste and less shock to the tongue.

Texture: Because of the three previous factors gelato is served semi-soft and ice cream is served hard. 

Because of these differences most gelatos seem more flavorful and richer to the palate.
